Recently I’ve been getting into the world of chia seeds. I’ve got to be honest, I’m obsessed! I was always scared to try them especially since they are so expensive. However, I just found this great deal for organic black chia seeds on Amazon (click here), so now that I have them, I’m trying all kinds of recipes. I am starting out with chia seed pudding & overnight oats with chia. Today I mixed two yummy recipes into one amazing superfood breakfast parfait. It tastes like a creamy & delicious chocolate, coconut, banana dessert. I’d like to share my version of these mixed recipes with you today.
Banana Chocolate Overnight Oats: Middle Layer
Make about 5 servings for the parfait
1 ripe banana
1 1/2 Tbsp raw cocoa powder
2 Tbsp pure maple syrup
2 Tbsp water (try coconut water if you have it)
1/2 cup rolled oats
3 Tbsp organic chia seeds
1 1/2 cups canned coconut milk
Mash the banana with a fork, then add the cocoa, maple syrup, & water to form a thick paste.
Stir in the oats, chia seeds, & coconut milk.
Place in a sealed container overnight in the fridge. Stir again before putting it into the parfait.
Coconut Chia Seed Pudding: Top & Bottom Layers
Makes about 3 servings for the parfait
1/2 cup canned coconut milk
1/2 cup almond milk
2 Tbsp organic chia seeds
1 Tbsp pure maple syrup or raw honey
1 tsp vanilla extract
Pinch of cinnamon
Place all ingredients in a small bowl & stir until evenly distributed.
Place in sealed container overnight in the fridge. Stir again before putting into the parfait.
To assemble:
Bottom layer: Chia Pudding
Middle layer: Overnight Oats
Top layer: Chia Pudding
Garnish: fresh blueberries, unsweetened coconut flakes, crushed walnuts, or cinnamon
