I was looking for some easy vegan breakfast recipes the other day & didn’t find anything that sounded appetizing. Then I remembered this sweet, creamy, rich breakfast muesli I had at a coffee shop last year. It was so delicious, but the recipe contained half & half as well honey. I am not vegan, however, I do like finding vegan recipes. Also, I am currently staying away from any dairy, & am curious to see if my headaches that I’ve had since I was little go away or decrease. So far, they have! I am thrilled, but still trying to figure out if taking out dairy is the real reason my headaches are lessening.
Here is my Vegan Muesli recipe:
Dried oats
Mixed berries (I like just blueberries)
Walnuts, almonds, &/or pecans
Unsweetened coconut
Cinnamon
Canned coconut milk
Agave syrup
Other options to add:
Dried cranberries or raisins
Bananas or other fruit
I don’t have exact measurements, because it’s so simple, you just add however much you like. If you love walnuts, add more! I usually put the oats in the bottom of the bowl or jar because when I pour the coconut milk on top, it drizzles to the bottom, & the oats soak up all that delicious milk.
Add all the dry ingredients except the cinnamon & pour the coconut milk on top. I usually add enough milk until I see it filling up on the sides almost covering all the dry ingredients. It sounds like a lot, & you can obviously add less if wanted, but I like it rich & creamy. When I don’t add enough coconut milk, everything is just too dry.
Add some cinnamon on the top if you like & store it in the fridge overnight.
In the morning, you’ll be good to grab & go!
I too see a major reduction in my headaches when I eliminate dairy from my diet. So I believe there to be a connection between the two for me.

That’s awesome! My mom keeps telling me to take dairy or wheat out of my diet to see if it helps. I am still having wheat, so it must be the dairy.
